Our New Eating Plan

Well, DH finally got on the bandwagon, and decided he wanted us to start eating healthy, unrefined foods. So, the past few days, we went through my Moosewood Restaurant Cookbooks, and some other "healthy cookbooks", and picked out about five different dinners. We went grocery shopping and , bought all of the ingredients, yesterday. We decided that every two weeks, we'll pick out one or two new recipes, and in a year, we'll have a lot of healthy things to cook.

I will try to post the good recipes. Not all of them are totally healthy. For example, last night we had tacos. But we used whole wheat/low fat tortillas, and we mixed lean ground beef with ground turkey, half and half...I call it "Turkeef". Anyway, we put fresh tomatoes, cilantro, avocados, green onions, and plain yogurt (instead of sour cream), and low-fat cheese.

I am allowing myself a little bit of Half & Half, for my morning coffee. Other than that, I cut-out all milk products. I've stocked-up on Silk Almond Milk. I'm not drinking latte's at work, anymore. If I want coffee, I'll just drink coffee.

Anyway, this is the start of our new "healthy" eating. It's not perfect, right now. But, it is better than before, and it will get better every day.

I was terrified, when we got to the checkout. All of this food was new to me (we bought LOTS of Bob's Red Mill grains). I had no idea what it was going to cost. It was $175 for two-weeks worth of groceries. I was happy. Most of those grains, will be stored in canning jars, so they will last a while.

Country Mart has a really good thing, right now. They package produce, and mark it with stickers...five for $9.99. We got a package of four green peppers, a package of four red peppers, a package of four avocados, etc. The first five are $9.99 and each additional package is $2. I was very pleased with that.

This morning, I came-up with a Raw Smoothie "basic recipe". I put a frozen banana and 3 or 4 coconut milk ice cubes and some agave nectar, in the blender. It was absolutely DELICIOUS!

I poured coconut milk into ice cube trays, and when they were completely frozen, I put the cubes into a ziplock freezer bag. Now, I just take out as many cubes, as I want.

The banana froze hard as a rock. I think I'll take it out of the freezer about 20 minutes early, next time...let it thaw a little.

I was thinking frozen berries, flax seed, all kinds of things can be added to this, for a very healthy breakfast. DH never eats breakfast, and he needs to. I told him that beginning tomorrow morning, I'm going to make a smoothie for both of us, for breakfast.

We love using the Red Mill grains and stuff. Their Cornbread mix is EXCELLENT!!! only 3grams of sugar where most others are 5-8 grams. And Terry doesn't like sweet cornbread. It really cooks up almost like cake but it is really good.

I know that Target down there has several food items and if you find their Archer Farms Organic stuff -- wonderful. And Walmart also has a great organic section and their breads that are whole grain -- man good eating.

I will have to try their cornbread mix. We love Bob's Red Mill products. I'm wanting to get some Larabars from TJ Maxx. I'll run into Target, and look at the Archer products. Thanks!
